Broccoli & Pea OMELETTE

 
 

I know what you’re thinking, it doesn’t sound incredible! I’ve become quite the omelette connoisseur over the past few years and this is absolutely one to try. When I was pregnant I started to eat eggs again; and since then I almost have eggs every single day in some form. Being a vegetarian its an easy way to get my protein in.

What You’ll Do

1) In a measuring cup or mixing bowl, use a fork to whisk together: eggs, garlic and onion until egg is broken up.

2) Add in spices. I like to use a lot of dill here

3) Using medium heat, warm the pan. Once warm melt small cube of butter and turn around pan so the melted butter evenly coats the bottom.

What You’ll Need

  • 3 Eggs

  • 1-2 garlic cloves

  • 1 tbsp Finely chopped onion

  • Fresh, finely chopped broccoli

  • Cooked pees

  • Small mozzarella balls

  • Dillweed

  • Salt + pepper

  • Butter

  • Cholula hot sauce (optional)
